French Vanilla Energy Balls

Are you ever in the mood for a little afternoon pick me up? Some days having a simple healthy snack in between meals can go a really long way as far as keeping us from settling for processed junk that is at our convenience. That’s why I try to keep snacks prepped out in advance that I can grab when I’m hungry. The easier to make, the better! The recipe that follows is for a new household favorite twist on a normal “energy ball.”
The powder I use is a shake mix that is full of fiber, protein, and most importantly, whole food based! You can substitute it for any other vanilla flavored protein, but in my opinion the “Complete” by Juice Plus is by far the best tasting. Ingredients:

•1 1/2 cup of rolled oats

•3/4 of a large banana

•1/2 tsp vanilla extract

•2 Tbs of honey

•1 Tbs maple syrup (optional)

•1 scoop of French Vanilla Complete

•1/3 cup of chopped walnuts (or your favorite nut of choice)

•Sprinkle of cinnamon

 

Instructions:

To make this recipe I simply add all the ingredients to my food processor and process until there is a thick consistency. If you would like the balls to be dry, add more oats. If you want your consistency softer, add more honey or Maple syrup. I then roll the mixture into little balls using the palm of my hands. For an extra twist I put the rolled out balls into my air fryer to make them crunchy on the outside and gooey on the inside.

If you do not have an air fryer you can put the balls directly into the fridge and eat and enjoy once they have hardened. Then you can take them out at your convenience, sprinkle some cinnamon on top, and enjoy!

Sweet Tangerine Chia Pudding

Welcome to my health and cooking blog! Today I wanted to share my favorite snack which has become my go to night dessert. There are a million ways to mix up a chia seed pudding recipe but this one hits the spot every time.
If you’re looking to make this more of a hearty breakfast meal, I like to add a couple of scoops of Greek yogurt, topped with extra slices of oranges and chopped walnuts. Perfect for a simple on the go breakfast! Below is the recipe for the chia pudding.

Ingredients:

•Two small tangerines

•1 Tbs stevia (for extra sweetness)

•2 Tbs of chia seeds

…And that’s it!! How can something so simple be so tasty?

 

How to make:

I first start off by peeling the tangerines and places them in my ninja blender. I add the stevia and a small dash of water and blend it up. I like to leave it not fully liquid so the mix will still have a couple small chunks of the tangerine in the pudding mix. I then add this to a small mason jar and then add the chia seeds and stir together thoroughly. Place this mixture in the fridge and let chill for a couple hours until the seeds have expanded and the mixture has become pudding-like.
The healthy fats and extra fiber from the seeds will keep you satiated and full for a long time. It has become our new favorite treat and I hope you enjoy it too. ❤️

Vanilla Banana Pancakes

My name is Sarah and I love finding new ways to make healthy things delicious. It can be so easy to get stuck in the mundane routine of cooking the same foods week after week. Let me tell you, chicken and veggies all the time gets old REAL QUICK. Sometimes all you need is a little bit of exciting visuals and a new recipe to kickstart you back into a healthy lifestyle. My love for health and cooking is why I wanted to make this blog. If just one person can benefit or enjoy the recipes I make along the way, I will be one very happy gal. Enjoy! 🙂

Today I am including a pancake recipe that is only six ingredients. I absolutely love simple recipes that make for a mouth watering meal and this is one of them. Whenever I am craving pancakes I like to whip up this simple little concoction. It is SO YUMMY and the best part is that it takes only five minutes to put together.

Ingredients:

1 banana

1/3 cup of oats

3/4 scoop of Juice Plus French Vanilla Complete (or whatever whole food based shake mix you prefer)

1 tsp vanilla extract

1tbs stevia

Few dashes of cinnamon

I first mash up a banana using a fork in a bowl. I then stir in the oats, vanilla extract, stevia, and cinnamon. Lastly I add the Juice Plus Complete mix into it. This is my favorite because it’s made from Whole Foods and naturally sweetened, but you can use whatever protein powder of your choosing! Once all the ingredients are combined I melt a tsp of coconut oil on my skillet and then add the pancake batter by about thirds. You will know it’s ready to flip when the outside starts to brown.

To top this all off, I love to mash together maple syrup with all natural almond butter (or your favorite nut butter.) It makes for a delicious nutty topping, and it is always paired well with an extra banana or your favorite fruit on top! If you’re feeling extra fancy you can add my favorite pancake topping of all- whipped cream, YUM. These ingredients make about three good sized pancakes and will definitely fill you up.
